"Feast On!" Friday

Here is another great Amish recipe from one of my Amish Cookbooks. Hope you enjoy!



Pumpkin Pecan Pie


Ingredients:
*4 eggs, slightly beaten
*2 c. canned or mashed, cooked pumpkin
*1 c. sugar
*1/2 c. dark corn syrup
*1/2 tsp. cinnamon
*1/4 tsp. salt
*1 tsp. vanilla
*1 c. chopped pecans
*1 unbaked 9" pie crust
***OPTIONAL: whipped topping


Directions:
Combine all ingredients, in a medium sized mixing bowl, except Pecans. Pour into pie shell. Top with the Pecans. Bake at 350 degrees for 40 minutes or until done. Let cool and serve with whipped topping.
